Wild Mushroom Marmalade

Ingredients:

10 shallots thinly sliced
2 tbsp honey
2 tsp thyme leaves
¼ cup sherry vinegar
400gm wild mushrooms
salt and pepper to taste

Method:

·    Sweat shallots to soften then remove to cool
·    On high heat place mushrooms into a very hot pan. Don’t toss or shake the pan right away you want to colour the mushrooms, season with salt and pepper
·    Reduce heat and add shallots, honey, thyme, and sherry vinegar and cook out until the mixture become thick, adjust seasoning if needed
·    Remove from the heat place on a baking sheet and let cool
