Tomato Jam

Yields 1.5lt
Ingredients:

20 roma tomatoes, peeled, seeded, and chopped
10 shallots, julienned
6 cloves garlic, thinly sliced
2 whole star anise
½ bunch thyme tied
2 cups olive oil
400 gm brown sugar
300 gm fresh ginger minced
salt and pepper to taste


Method:

·    In a large wide sauce pot sweat the shallots in the olive oil but do not colour, once soft turn your heat to the lowest temperature
·    Add the tomatoes, star anise, thyme and sugar. Cook out and cover with a cartouch, while stirring frequently to avoid sticking.
·    Once the mixture begins to thicken up add the garlic and ginger. Continue to reduce until thick
