Ingredients:

roma tomatoes, peeled, seeded, and chopped

shallots, julienned

cloves garlic, thinly sliced

whole star anise
½
bunch thyme tied
2
cups olive oil

gm brown sugar
300
gm fresh ginger minced
salt
and pepper to taste
Method:

In a large wide sauce pot sweat the shallots in the olive oil but do not
colour, once soft turn your heat to the lowest temperature
·
Add the tomatoes, star anise, thyme and sugar. Cook out and cover with a
cartouch, while stirring frequently to avoid sticking.
·
Once the mixture begins to thicken up add the garlic and ginger. Continue
to reduce until thick
