Ingredients:

vine ripe tomatoes
2
cloves garlic sliced
olive
oil
salt
and pepper
Method:

Sweat garlic in the olive oil but do not colour
·
Add tomatoes and quickly heat only to soften
·
Place into a blender and blits
·
Season and serve chilled
·
Garnish with basil oil
