Basil Oil

Ingredients:

1 bunch basil
1 cup vegetable oil

Method:

·    Pick the leave from the basil and wash, then blanch and shock basil and pat dry
·    Place the basil in a blender with a little oil to get it started the blitz while slowly adding the remaining oil
·    Over a litter container, place a coffee filter fastened with a string or rubber ban pour in the basil puree to separate the puree and oil
·    What your left with is the basil flavoured oil
