Salmon Tartar in Radish Cups

Yields 20 portions

Ingredients:

8 oz salmon fillet
¼ tsp sesame oil
¼ tsp mushroom soy sauce
fine sea salt
fresh ground white pepper
10 breakfast radishes
1 sheet nori


Method:

·    Cut a small slice off the top and bottom of each radish, then cut each radish in half crosswise. Using a small melon baler, hallow out the center of each radish, making a cup about 1/8 inch deep
·    Cut the salmon into very small cubes and place in a well chilled bowl. Add the sesame oil soy sauce, season with the salt and toss well
·    Fill the radish cups with the salmon tartar. Garnish with strips of nori and coarse sea salt

You can prepare them the morning of un garnished in the refrigerator
