Candied Maple Bacon

Ingredients:

2 pkg fresh bacon slices
500ml maple syrup

Method:

·    On a large lined baking sheet lay the bacon strips flat and not touching. Cover with another sheet of parchment and place one more baking sheet on top to weigh down the bacon. This will keep the bacon flat and straight and cook until slightly crispy and let cool with the tray on top
·    Meanwhile in a medium sized sauce pot, reduce the maple syrup to soft ball stage and keep warm
·    Take the strips  and dip in the maple syrup and bake again to crisp and harden the syrup
·    Let cool on a wire rack
·    If you need to dip the bacon again for a thicker coat of candy repeat the process
·    To use up the remaining syrup continue reducing to a hard ball stage and pour into candy mold with sticks to make lollipops
